1 lb Pork Sausage
3 TBSP Fresh Crushed Garlic
1 TSP Marjoram
1/4 TSP Thyme
1/4 TSP Savory
1/4 TSP Rosemary
1/2 TSP Oregano
2 TBSP Finely Chopped and Crushed Sweet Basil
3 Generous Dashes Natural Sugar
2 TSP Black Pepper
3/4 TSP Cooked Crushed Red Pepper
30 oz Crushed, Diced, or Sliced Tomatos
8 oz Tomato Sauce
6 oz Red Cabernet
2 oz Filtered Water
16 oz Drained Pitted Black Olives
- Sear sausage in pan with sufficient depth to add liquids. Use a wooden slotted spoon to mince sausage into smaller bits.
- Turn down heat to low, add garlic, and continue cooking for 5 minutes. Do stir every 30 sec to prevent garlic from scorching.
- Next, add all liquid ingredients including the olives.
- Thoroughly stir in all dry ingredients.
- Cover and cook on low heat until sauce comes to a slight boil.
- Turn off heat, stir sauce, and allow to rest for 45 minutes.
- Turn back on low heat, and continue cooking sauce until it comes to a slight boil again.
- Turn off heat, stir, and allow to rest for 1 hour.
- Turn back on low heat, and continue cooking sauce until it comes to a slight boil; however, this cook continue cooking at a light boil for 10 minutes. Stir sauce every 3-5 minutes.
- Turn off heat and let rest for 10 minutes before pouring over your most favorite pasta.
